A Series on Food, Identity, Neighborhood Folklore – A Journey Through Jerusalem's Food Stories | Amit Aaronson Hosts Jerusalemite Chefs
The intergenerational meeting will explore the points of friction that are a key part of any local culinary culture – tradition versus innovation, secular liberalism versus following the Glatt Kosher restrictions, the mid-20th-century kerosene cookers and kugel dishes (which are not traditional at all, as it turns out) versus today's sushi rolling mats and risotto pans. The stage will be shared by Shmil Holland, a chef and experienced Jewish cuisine researcher who operated the city's leading catering company for years and later the "Shmil in the Lab" restaurant, and Chef Nir Levy, who oversees the restaurant group that runs, among others, the "Talbiye," "Fringe," and "Burger Room" restaurants, the "Gelato Variegato" ice cream parlor, and the Wine Bar on Gaza Street.
The two will share their personal perspectives as culinary creators in the capital and discuss the different meanings of tradition.
