Amit Aaronson Hosts Jerusalemite Chefs
The series opens with a conversation between Amit Aaronson, a former restaurant critic for Kol Ha'Ir ("The One Who Speaks from the Stomach"), and chef Ezra Kedem, regarded as one of the founding fathers of modern Israeli cuisine. In the mid-1990s, Kedem established Arcadia in Jerusalem, a restaurant that became a landmark of Israeli dining. There, among the city's cobblestone alleys, he developed a new culinary language and mentored a generation of young chefs.
Since then, Kedem has continued to champion the local food scene through special meals, workshops, training programs, and numerous community projects—both in Israel and abroad. In this opening session, he will look back on thirty years of cooking in Jerusalem, sharing particularly colorful stories from his long career. His insights and practical tips promise to make all of us better local cooks—even down to how we pick lemons straight from the tree in our own yards.
